The Nashville Edit team loves to end each workweek eating at one of Nashville’s most delicious spots as a team, and though none of us are vegan, we opted for Avo, a delicious plant-based restaurant newly owned by Annie Choo. You may remember this spot being completely raw, meaning none of the food was cooked to preserve health benefits, but Nashville wasn’t quite ready for that. With this new, more mild approach to eating food that celebrates plants and their amazing flavors, we couldn’t wait to give it a try. After tasting several dishes, we couldn’t believe there was no dairy, meat or egg-based ingredients in these items with how delicious, creamy, and flavorful they were.
